Coconut Curry Shrimp

Here's a very easy and quick dinner that will delight your palate:

Coconut curry shrimp - ready in 15 minutes.
This is a sweet n tangy dish.

Ingredients for 4:

  • Coconut milk (or cream, but beware that it is very fat) 0.5 cup
  • Curry sauce 0.5 cup
  • Vegetables (including bell peppers) - 3 - 4 cups, chopped
  • Cooked shrimp - 2 cups
  • Onion - 0.5-1, chopped
  • Garlic - 2 cloves
  • Good cooking oil - 2 tbsp

Preparation:

Fry onion until golden, add minced garlic. Add vegetables and fry for a minute or two. Add the rest. Stir-fry until hot (do not overcook vegetables).

Serve with basmati rice.
