bigos

Hot salsa, no tomatoes.

Ingredients:

  • Chili peppers, 10
  • Jalapeno peppers, 8
  • Green pepper, 1 large
  • Large English cucumber, half
  • Garlic, 3 large cloves
  • Onion
  • Lime
  • Olive oil, 2-3 TBSP
  • Wine vinegar, 1 TBSP
  • Oregano, 1 TSP
  • Parsley, 2-3 TSP
  • Sometimes I like to add white cabbage.

Preparation:

Chopped all ingredients into very fine pieces. Added 2 or 3 TBSP of oil, and lime juice. That's it. It took under 10 minutes, including washing. This made just over three cups of excellent salsa. Will last at least 2 weeks in the fridge.
